What is gluten and what is with wheat? Commonly asked by many people but don't actually know the answer. Im beyond proud of my Mum who has released her documentary on the process of wheat and why we have become to intolerant to it.
To be clear, gluten is a protein found in wheat called gliadin (a prolamin protein) and glutenin (a glutelin protein).
When someone has celiac disease, the consumption of gluten triggers an immune response that damages intestines and prevents the absorption of vital nutrients
