Almond Butter Choc Chip Cookies

Ingredients

  • 1/4 cup coconut oil (soft or melted)
  • 1/3 cup rapadura (you can get rid of this, and just add some stevia? maybe 6 drops - and add an extra 1/3 cup of almond meal to sub for the texture/consistency of it) 
  • 2 Tbsp almond butter 
  • 3 Tbsp aquafaba - (or 1 - 2 eggs)
  • 1/2 tsp sea salt
  • 1 tsp baking powder
  • 1 1/3 cup almound flour
  • 1/2 cup desiccated/shredded (i use mums) 
  • 3/4 cup vegan dark chocolate chips - (or cocao nibs )

extras - cinnamon and fresh grated ginger

  1. Whisk together coconut oil, rapadura, almond butter, aquafaba, salt, baking powder in a bowl until completely combined
  2. Add almond flour and coconut until combined
  3. Mix in chocolate chips
  4. Refrigerate for overnight or at least 1 hours
  5. Preheat oven to 180 degrees 
  6. scoop a spoon full onto a baking tray and flatten to 2cm high
  7. Bake for 10 minutes and let cook - make sure you let them cool before you grab them, they set better.
