Cauliflower Mash

A low card option that is a perfect compliment to a main meal

Ingredients

  • tbsp olive oil or ghee

  • 1 cauliflower (approx 500-800g - finely chopped (or pulsed in the thermomix)

  • 1 onion, sliced

  • 1 clove garlic, smashed - or you can use powdered organic

  • Twig of rosemary

  • 1/4 cup vegetable stock

  • 1/4 tsp salt

  • a little sea salt and pepper to taste

Method

  1. Saute onions and garlic in olive oil in a pan on a medium heat until they have softened

  2. Add the chopped cauliflower, stock and rosemary (leaves only) to the pan and steam with a lid on for 5 - 10 minutes

  3. Remove from pan and transfer to high speed blender.

  4. Blend till creamy! Add a bit of butter for creamier texture.

THERMOMIX VERSION

  1. Saute onions and garlic in olive oil in a pan on a medium heat until they have softened

  2. Pulse cauliflower in TM bowl until fine

  3. Transfer onions and garlic into the bowl with the cauliflower

  4. Add stock, and mix on speed 7/10 seconds

  5. Heat mash for 8 minutes/speed4/90degrees

  6. Remove leaves from rosemary twig and place in bowl, cook for a further 1 minute

  7. Salt and Pepper to taste

Serve with a sprinkle of rosemary or dill.
