Chocolate Caramel Cream Gummies

This was a little experiment again…usually how most of my food develops…

I made these on Halloween for the kids that came around to the house. I was definitely the ‘weird’ one in the street with the home made jellies!

I remember when I went trick or treating and would rock up at some houses and they would give us fruit! And look now, I am one of those households! I didn’t have the ‘usual’ lollies to give them (at least I didn’t give them an apple), and I refuse to buy the sh*t. I don’t remember the last time I actually bought a packet of lollies or Cadbury chocolate. So these babies came out instead, sorry to the kids down the road, but at least I didn’t give them some nuts and fruit.

Organic is super important when using gelatin. You do not want to be consuming the fats from an animal that has been prodded, poked and mistreated. You are what you eat, so take note to find a good one or order through the links I have given.

Ingredients

chocolate layer

  • 1 1/2 - 2 Tbsp organic gelatin

  • 1 cup of filtered water

  • 1 scoop of cocaa huger fix - this has a mix of mesquite, coco, caramel like flavours (or use 2 tbsp coco)

  • 1 tbsp maple, or sweetener of choice

coconut layer

  • 1 cup of filtered water

  • 1 cup coconut cream

  • pinch of salt

Method

  1. Chocolate layer: Mix the gelatin and filtered water in a bowl/saucepan and let it ‘bloom’ - giving it a good stir a couple of times, place on a medium heat on the stove, occasionally stirring until the gelatin has completely dissolved. There will be no granules.

  2. Add in you coco mix, sweetener and pinch of salt. Line a large square tin with baking paper or lightly coast the base in coconut oil (this is so it doesn’t stick when you get them out) and pour into the tin let it set in fridge - 3 hrs or so

  3. Coconut cream layer: Mix the gelatin and filtered water in a bowl/saucepan and let it ‘bloom’ - giving it a good stir a couple of times, place on a medium heat on the stove, occasionally stirring until the gelatin has completely dissolved. There will be no granules.

  4. Add coconut cream and salt to gelatin and stir until combined. Pour over chocolate layer and refrigerate until set! Chop up into desired shapes and sizes and keep refrigerated.
