Ginger nut Cookies

I'm on a cookie obsession right now, so I came up with these through a friend at uni yesterday. The great thing about going to a natural health food college is that everyone has epic food (and sometimes willing to share). So these are adapted from something similar she quickly recited to me. She seems to be similar to me though in chucking in and not measuring, but they came out good.

Ingredients

  • 1 1/3 cup almond meal

  • 1/2 cup shredded coconut

  • 3 tbsp aquafaba (chickpea brine)

  • 3 tbsp tahini or almond butter

  • 2 tbsp rapadura sugar

  • 2 tbs coconut oil melted or softened

  • 1/2 tsp cinnamon

  • 2 tsp ginger powder/fresh

  • 1/4 tsp bicarb

  • 1/ tsp salt

  • 3 drops of stevia or vanilla

option dd ins - choc chips

Method

  1. Mix aquafaba, tahini, sugar, coconut oil, cinnamon, ginger bicarb and salt together until creamy and combined

  2. Mix the rest of the flour in until sticky and combined

  3. Refrigerate mixture for 30 min or overnight

  4. Preheat oven 180 degrees

  5. Scoop into small balls and flatten to cookie shape

  6. Sprinkle sesame seeds on top

  7. Bake for 10 min

  8. Let Cool
