Mum's Meat Loaf

Oh my golly, I was going through my mums first cook book from 2002 - Changing Habits Cook Book. This book is filled with the best and most traditional food!

My mouth was watering as I read it and there are so many childhood memories attached to all these recipes. Mum always cooked from scratch and we ate bloody good! I remember this meat loaf so well as my grandma would also make it served with peas, potato mash and greens. It tastes even better the next day.

Ingredients

  • 500g organic mince beef

  • 1/4 cup chopped onion

  • 1/2 cup grated carrot

  • 1/2 cup grated zucchini

  • 1/2 tsp seaweed salt

  • 2 tbsp freshly chopped basil

  • 1 organic, free-range egg, lightly beaten

  • 1/2 cup almond meal

  • 1/4 olives, chopped/sliced

  • 1/2 tomato sauce

  • 1/4 tomato paste

Method

  1. Preheat oven to 160 degrees

  2. Mix all ingredients together, except the tomato sauce, until well combined

  3. Place into loaf tin lined with baking paper and smooth the top

  4. Pour over tomato sauce and spread evenly over the top

  5. Bake for 30-40 minutes

Serve with mash, baked potatoes and some greens! THANKS MUM!
