A large knob of ginger grated (if you really like ginger, put a little extra in)
120g sunflower seeds
100g almond flour or meal
60g sesame seed
30g chia seed changing habits
40g honey or maple (or your choice of sweetener)
40g changing habits coconut oil
2 tsp changinghabits vanilla essence
1 tbsp changing habits cinnamon
1/2 tsp nutmeg
1 cup shredded or flaked coconut (I put 1/2 in at the start and 1/2 in at the end)
7 large dried figs (roughly chopped into small pieces)
1/4 tsp salt
Note: I usually soak my nuts and seed in a tsp of salt for over 4 hrs. But you can skip this step if you don't have the time.
Set oven to 110degrees Celsius.
Shred or grate you ginger, depending if you have a good mixer will determine how you shred it. I use the thermomix and wiz the bageepers out of it. You could probably use a powder but its not a strong or fresh.
Place all dry ingredients (except 1/2 cup of coconut and figs) into the food processor or Thermomix . Stir till spices, seeds and nuts are mixed, (use the reverse speed on a thermomix). Pour in the melted coconut oil, vanilla, honey and stir till combined. Once combined and all nuts and seed are covered, pulse until small muesli sized pieces. 3 to 4 times should do it in the Thermomix. This can also be done in other mixers, just shake it around to get those pieces moving evenly.
Pour mixture into two baking dishes and place in oven. Bake for 4 1/2 hours on 110 degrees. It might feel a little sticky when removed but it will crispy up when it cools. Let it cool, mix in your fig and coconut. Place in air tight containers or jars.
It makes quite a bit so you will probably need a large container. :D
